Dining Room

Cook Yourself Thin
There is a new show on Lifetime called Cook Yourself Thin. It takes everyday recipes and makes them better for you by cutting out alot of the fat and calories. I love French Onion Soup but its so fattening and I didn't know how to make it but they had a recipe for it on the show so I decided to try it. I am not a cook either and it actually turned out and was good. I would definately make it again.
Here is the recipe:
1/4 cup olive oil
2 large white onions, halved lengthwise and cut into 1/4-inch-thick slices crosswise
4 sprigs fresh thyme
2 bay leaves
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1/3 cup dry white wine
4 cups low-sodium chicken stock 4 (1-inch-thick) slices whole-wheat baguette, toasted and cooled
2 ounces Gruyere, shaved into paper-thin slices with a cheese plane or vegetable peeler
1. Preheat the oven to 400 degrees.
2. Heat the oil in a large saucepan over medium heat. Add the onions, thyme, bay leaves, salt and pepper, and cook, stirring occasionally, until the onions are golden (not brown) and nearly melting, about 45 minutes. Stir in wine and simmer, stirring occasionally, until reduced by half. Stir in stock and simmer, stirring occasionally, for 15 minutes.
3. Place 4 soup crocks or ovenproof bowls (no larger than 4 inches round) on a rimmed baking sheet. Place a baguette slice in each crock. Divide the soup among the bowls and top each with a single layer of cheese slices.
4. Transfer to the oven and bake until cheese melts and is golden brown in spots and soup is bubbling, about 10 minutes. Serve immediately.

Storms in Dallas
So my plans to enjoy being in San Francisco today didn't happen because of storms in Dallas this morning. We were delayed almost three hours and it put us behind all day :(. Needless to say passengers were not happy today but we tried to make the most of it. There wasn't anything we could do. Its the part of the job that isn't too fun. Sometimes you never know where you are going to get stuck or where you are going to end up. The weather was beautiful in San Francisco tonight though. We had mexican food and margaritas by the bay so I can't complain too much. I am off to Chicago tomorrow morning and will be back in Louisville tomorrow night.

Back to Reality
So after being off of work for 2 and 1/2 weeks I was not thrilled about having to go back. It was great being on vacation even though I didn't go anywhere. So not only did I not want to go back to work but I had to fly to chicago last night and I got a wake up call from Scheduling at 3 AM telling me I need to be at the airport at 5 AM. Needless to say I was not happy. I hadn't been up before 10 AM in the past two weeks. So after getting ready for work I walk outside to find that its pouring down rain and I have about a 15 minute walk to the airport. The one time I forget my umbrella was today. I left it in my car in Louisville. Not a great way to start off the day. I thought it was going to be downhill from there but I ended up in San Antonio, Texas this afternoon and it was 90 degrees and sunny. So I headed to the pool. It was a great relaxing way to spend the afternoon. The reality of work slapped me in the face today. At least now I am not in vacation mode anymore. Anyway I have to get to bed.. another early start in the morning but at least I am heading to San Francisco. I can't wait to get out in the city.

The Amazing Race
I am so addicted to the Amazing Race show. I started watching it half way through the season and now I don't miss an episode. Now I really want to go on the show. What better way to see the world and do all kinds of things you wouldn't normally do with a chance of winning a million dollars. Anyone want to be my partner?

Spring Updates
